Chicken Soup

I've been feeling a little under the weather lately... so I thought that I would make some homemade chicken soup, just like grandma used to make! 

1- Chicken, already baked
1- Onion, finely chopped
1 - Carrots, baby bag size, already peeled, then chop
4 - Celery, long sticks from stalk, then chop
1 - 4 oz can - Green Chili, chopped
1 packet - Onion Soup Mix
1 or 2 - Garlic Cloves, peeled and smashed
Cilantro, hand full chopped (not shown in picture of ingredients)
1 - 32 oz can - Chicken Broth
1 package 10 to 16 oz - Pasta (Farfalle/Bowtie), Egg Noodles,  this time I'm using a Organic Mix

Sometimes I use Poultry Seasoning, Season-All, Natures Seasongs and/ or other seasonings, but this time I used what I had in the cupboard, But here are the staples... season to taste using Salt, Pepper, Sage, Thyme.  There has been times where I have chopped up a Jalapeno Pepper an added it the the stock.



Start off by putting your already baked chicken in a big pot, add enough water to fully cover the chicken.  Bring to a boil, then turn down to a simmer, let this simmer for a 2 - 4 hours.  Adding more water as needed, you want to maintain this amount of water for your broth.   Add chopped onion, onion soup mix, and garlic.




In a large bowl place colander inside or attach it to the bowl, depending on which kind of colander you have to use.  Pour the broth in the colander that is sitting inside the bowl.  Now in a separate bowl or plate sit the colander and continue to take the chicken out of the the pot, either by pouring it into the colander or picking it out with the proper utensils, it will be very hot.  Let the chicken cool for about a half hour or so before deboning it and pulling chicken apart fo bite size pieces.  You want to make sure you have got all the bones out of the chicken before adding the chicken back to the broth stock.



After adding the chicken to the broth stock add your green chili, carrots, celery, and cilantro.  Cook until vegetables are soft when you can spear them with the fork or they are soft when to tasted.  At this time you want to make sure that you pot has the same amount of broth water as when you started this whole process, if not... add the store bought broth, don't add water... because you are at the end.  Add your choice of pasta noodles, being careful not to add to many noodles because they will swell up and suck up alot of the broth.  Cook until noodles are done.

There you have it... Homemade Chicken Soul for the Soul!
