Chicken & Broccoli or Chicken & Spinach Braid

This is a pretty versatile recipe... I have made a Chicken and Broccoli and Chicken and Spinach Braid, by just changing out the vegetable.  It is really good either way! 


 
 Bake at 350 degrees F
for 30 - 45 minutes or until crust is golden brown


 
Ingredients in the Braid are as follows:


Chicken ~ 4 large breast pieces ~ seasoned and baked
(salt, pepper, onion powder, 2 cloves garlic smashed and smeared on the breasts)

I cover my cookie sheet with tin foil and then put a slight bit of olive oil on the pan around the chicken breasts, then bake for 20- 30 minutes until baked thru.  If large breasts are used fillet them so they will bake faster, then chop chicken finely (about 1/2 in pieces). 

After baking the chicken and it has cooled, I cut it into smaller pieces.  You can either cut it into 1/2 cubes or shred the chicken into small bit size pieces. 

Pillsbury Crescent Rolls ~ 2 packages

Broccoli Florets or Spinach ~ 1 box package frozen

Red Bell Pepper ~ 1 large, chopped fine

Cheese ~ shredded cheddar & mozzarella blend or cheddar & parmasen

Sometimes we add Jalapeno Pepper Flakes, the seasoning gives the braid a nice bite.  Make sure not to add to much of the Jalapeno Pepper Flakes!

Chicken Salad Crescent Rolls







Ingredients

1 (8-oz.) cresent rolls
1 cup of your favorite chicken salad
2 tablespoon poppy seeds

     Unroll 1 (8-oz.) can refrigerated crescent rolls; separate each dough portion along center and diagonal perforations, forming 8 triangles. Spoon 2 Tbsp. of your favorite chicken salad on the wide end of each triangle. Starting at the wide end of each triangle, roll dough over chicken salad, pinching edges to seal. Place rolls, seam sides down, on a lightly greased baking sheet. Sprinkle tops of rolls evenly with 2 Tbsp. poppy seeds. (Seeds will stick to rolls without a binder; you don't need to brush with egg.) Bake at 375° for 10 to 12 minutes or until golden brown.


Lemon Basil Chicken Salad Recipe




Ingredients








4 cups diced cooked chicken
1 rib minced celery
1/4 cup chopped fresh basil leaves
1/4 cup slivered almonds
1/2 cup sour cream
1/2 cup mayonnaise
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper


Directions

In a medium bowl, combine chicken, celery, basil and almonds. In a small bowl, combine sour cream, mayonnaise, lemon juice, salt, and pepper. Add to chicken mixture, tossing gently to coat. Cover and chill.

I've seen Chicken Salad made in different combinations.  Some of my favorites main ingredients are Onions, Celery, Walnut, Pecans, Almonds, Grapes, Apples, Cranberries and a few different herbs and spices such as Basil, Tarragon leaves.  I guess there is no right or wrong way to make Chicken Salad.  Try some of these recipes above and I hope your enjoy experience!

Little Tikes and Step 2 ~ Children's Outdoor Toys

 
We'll for those of you who have followed my blogin the past... you know that I'm one that really researches my interests before making decisions that lead to purchases, and for those that this is your first time to my blog, I hope you enjoy and come back again and again!   

So here we go again... I'm looking for some outside toys for the yard for Gracie.  Our grand daughter is getting older and really enjoys being outside, we do too! 
 
 
Right at the moment our back yard is a blank slate.... dirt.  Gracie really doesn't care whether it's dirt or not... we're out there playing ball away, she's happy!  That's what you usually get with a new house.  So... we have planted a few trees and we're getting ready to do a contrete patio and such soon.  In the mean time I'm doing a little searching........
